Cinnamon Bread
( well, kind of..it's more tea cake-ish.)

1/4 C. Softened Butter
1 C. White Sugar
2 Large Eggs.
1/2 tsp. Salt
1tsp. Vanilla
1/2 tsp. Lemon juice
1 tsp. baking powder
1tsp. baking Soda
2 cups. Flour
1 C. buttermilk*
1C. brown sugar
2 Heaping TBS. of ground Cinnamon.

* If you don't have or can't find Buttermilk.. do 1 Cup milk and 1Tbs of white vinegar or lemon juice, and let it stand for about 5 min or so.. It works out perfectly.

Cream together. butter and sugar, Beat in eggs,salt and vanilla and lemon juice.
Sift together flour baking soda and baking powder,Butter milk. Beat well!

In a separate bowl mix up brown sugar and cinnamon.

in a WELL Greased, Lined with Parchment. 9 in loaf pan. add 1/3 batter. Sprinkle on 1/3 of cinnamon mixture. Repeat layering process 2 more times Ending with Cinnamon on top.

Bake at 350 degree's for about 1 hour.
Use a knife to loosed the edges and let it cool in pan for about 10 min before removing and resting it on a rack.

My kids and hubby could hardly wait for me to get it out of the pan. All of them gobbled it down and asked for second and thirds. It was really quite easy to make. Super moist and very yummy!
