Crepes

 Crepes
  • 3  oz  butter
  • 2  each  large eggs
  • 1  each egg yolk
  • ½ cup water
  • 1  cup  milk
  • ¼  tsp salt
  • 1  cup  all-purpose flour
  • *Optional Toppings: Strawberries, powdered sugar
1.  Melt the butter in a medium non-stick pan.  Once the butter is melted, continue to cook until golden brown. Turn off heat. The residual heat will make the butter a little browner so err on the side of golden brown vs. dark before you turn the heat off.
2.  In a medium bowl crack the eggs.  Add water, milk and salt and gently whisk to combine.   Add flour and whisk just to combine until smooth.
3. While whisking the mixture slowly, pour the brown butter into the mix.  You can strain the mixture to remove any lumps or use as is if the lumps are minor.
4. Using a paper towel, wipe out the same non-stick pan you used to melt the butter.  Heat the pan over medium heat.
5. Using a ⅓ measuring cup, scoop the batter and pour into the center of the hot pan.  Using a rotating motion with your wrist, swirl the batter around to the edges of the pan. The thinner the better.  Set the pan back on the heat to cook. After 2 minutes use a rubber spatula to lift the edge and flip the crepe over.  Cook on the other side for 30 seconds to 1 minute depending on how golden brown you like them.
6..  Fold the crepe in half.  Then fold in half again to form a triangle. You can also just roll the crepe up loosely like a carpet.
7.  Eat as is or sprinkle with strawberries and powdered sugar.  Enjoy!

Bacon wrapped chicken

I found this one via Pinterest. and it's yummy and super easy!






Chicken breast sliced in half ( I do mine horizontial for a skinnier chicken)

Smash flat

1 Tbs, of cream cheese placed in the center of raw chicken breast.

Jalepenos sliced up layer on top of Cream cheese. ( use as much as you want.. or if your like me you will leave out the jalepenos and get creative with the spices in your cuboard to mix in with the cream cheese instead.)

Roll up the chicken to encase the cream cheese. use toothpicks to secure.

Grab a strip of your favorite type of bacon ( un cooked) wrap around your raw chicken roll cover as much area as possible. and secure with a toothpick.

repeat as many as needed.

throw them on the grill till chicken is cooked thru. ( mine usually cooks for a good 20-25 min)

serve a with kick'n salad. super yummy!

cut some of the fat by: using fat free cream cheese. and turkey bacon

Black Bean Chicken





1 Can of Black Bean
1 Can of Diced Tomatos
1 Can of Corn
drain all the cans!
1Pkg of McCormick Taco Seasoning.
2-3 Chicken breast cooked and shredded ( or if you really want to make it easy use a can of chicken)
Opt add ins- Diced Jalepenos or Green chile's.
I personally don't like canned chicken, to me is smells and taste like tuna fish

Mix it all together and fill and 9X9 pan.

Shred some cheese over the top and cook for about 20-30 min. till melted and bubbly...
Serve with Tortilla chips

garnish with Sour cream and salsa

This is a great throw together dish. That most people like. It's not really spicy, Paul would like it much spicier but I don't know what I'd add to do that.. I also like that you can cater this to what ever way you like it add things in or takes things out.. Its a winner.. trust me!

Chicken Enchilada's



Flour tortilla's
cubed or shredded chicken breast.(2-3)
1 can of red enchilda sauce( opt.)

1 can of Crm of Chicken soup
1 cup. of Sour cream
1 cup. of shredded chedder
1 small can of diced green chili's

1-2 cups of shredded cheese.

cook chicken and add enchilda sauce, set aside

in a sauce pan combine:
soup
sour cream
cheese & green chili's

Heat till cheese is melted

spread a thin layer of cheese mix on warmed up tortilla
add a spoonful of chicken straight down the middle of tortilla
roll up ( make sure to tuck ends in!)
And place in a 13x9 pan
Repeat till you have desired amount or till pan is full.( I can usually wrap 8 for a 13x9)

Add remaining sauce over the top of enchilda's
sprinkle cheese over the top
cover with tin foil

Bake 350
for about 20-30 min,

serve up with salsa and sour cream

Swiss steak in the pot








I grew up on this, and deem it one of my comfort foods.

1 large package of top round steak.
quarted and browned
( I dip mine if a flour salt and brown it up in a little oil.)

In a crock pot.
Add: I large can of Crm of Mushroom and 3/4 can of milk.
Mix and add browned meat.
cover and cook on high for at least 5-6 hrs.
( the longer you let it cook, the more tender the meat becomes.)

Serve over Rice.

Hawiian Haystacks

Here is a quick easy and yummy dish.

3 cups cooked rice ( give or take depending on the size of your family)

1 can Crm of chicken soup plus 3/4 milk heated ( if you like LOTs of sauce double this)

Optional Toppings:
(But I at least stongly recommend the first 3 off the list)
Cubed ham or chicken
pineapple chunks.
chowmein noodles
green onions
diced fresh tomatoes ( or you could try dried I guess)
Raisins or craisins
Mandrin Orange's
green peppers
slivered almonds
chopped celery
or whatever else you think would taste good on top

Then serve up in this this order
first rice
sauce
toppings.

Quick N' Easy. And everyone gets to make it there own.
