Tortellini Soup



2 lbs Italian Sausage

2C. onions

2C Clove garlic

10C Beef Broth

2C water

3-6 Tbs Chopped parsley

2 med green peppers( opt)

1 C of Mushrooms ( opt)

4 C tomatoes( I use canned diced or stewed tomato's)

1-2 C carrots( sliced or diced)

1T. Basil

1T.Oregano

2-8oz cans of Tomato Sauce

2-3 C Zucchini ( sliced or diced)

16 oz of Tortellini

Brown Sausage & Onion

Then add everything else & stew for about 20 min

Add PRE-BOILED tortellini ( when boil undercook just bit)

pre-boiling tends to help it from being over cooked and too "soggy"

Another great soup for the upcoming cold months!!!!
