Sugar Cookies



3/4 C. Shortening


1/4 C. Butter


1 C. Sugar


2 eggs


2 tsp. Vanilla


1/2 tsp. Lemon Juice


3 C. Flour


1tsp.Salt


1tsp. Baking Powder





Cream Shortning,Butter & sugar.add all other ingrediants. Chill in fridge. Roll out.





Bake @350 degrees. about 8 min.





Frosting:


1/4 C. Butter


2 C. Powdered Sugar


1 tsp. vanilla


food coloring.( or not)


Beat until smooth..( add a tsp a milk if needed.)





We have had these every year at my Grandma K's christmas party. They are classic. and so yummy. Of course once I moved away I don't get to get all of her goodies.( Serious a buffet table worth!) So my Grandma was sweet enough to give me the recipe.

Homemade Oreo Cookies.


I have seen these around about a million times. But I didn't like that the cookie part was soft.

Well I had an OREO sweet tooth and no Oreo's So I found an excellent recipe. That I really like.

They are a bit sweeter then reg Oreo's In fact they remind me of CAPRI's from pepperidge( except the filling isn't as "Lardy" tasting.)

It was pretty easy and the kids had fun squeezing in the filling!! They were a hit before they became "oreo's"


For Chocolate wafers:

1 1/4 C flour

1/2 C. Cocoa powder

1 tsp. baking soda

1/4 tsp. baking powder

1/4 tsp. salt

1 1/2 C. sugar

1/2 C +2 TBS. unsalted butter ( room temp.)

1 Lrg. Egg


Mix all your dry ingredients then add the butter .. mixing it in.. then add the egg. continue to mix until dough comes together in a mass ball.( it will look pretty dry.)


Take about a teaspoon of batter and place on a slightly greased sheet. place 2 in apart. Roll and flatten.

Bake for about 9 min on 350 degrees.


For the Cream filling

1/4 C. unsalted butter ( room temp)

1/4 C. Vegetable Shortening.

2 Cups. Powder sugar

2 tsp. Vanilla

( it wasn't smooth as I thought it should be so I add a CAP FULL of milk to make it creamy.



Place filling in a pastry bag( or zip lock and cut corner)

Blob about a teaspoon in the MIDDLE of upside down cookie( make sure cookies have cooled completely.) Place another cookie on top and lightly press down.


Makes about 30 cookies. the cookies is a bit crisper( which I prefer) If you want a "chewier" cookie use about 2 tsp of dough and shave a few min from oven time.

Sparkling Sugar Toffee Butter Cookies.

Sorry the picture is soo small... Can't get it bigger with out being super fuzzy.. price you pay when you don't use your own right?

1C. Sugar
3/4 C Butter
1 Egg
1tsp. Vanilla
2 C. Flour
1 1/2 tsp. Baking powder
1/4 tsp. Baking soda
1/2 cup english toffee or almond bits.
( you can buy a bag of toffee bit in the baking section by choco chips. Or Use skor bits.)

Combine Sugar, Butter, egg& vanilla. Add Flour baking powder& baking soda. Stir in Toffee bits.

Make into small balls. place 2 in apart.. Flatten w/a glass dipped in sugar. ( moisten the bottom of a glass dipp into sugar. or colored sugar crystals. and Flatten your dough that way.)

Heat oven to 350 degrees,
Bake for 9-11 min. or until LIGHTLY browned.

Oatmeal Chocolate Chip Cookies


OaTmEaL ChOc. CoOkIes



1/2 C. Butter
1/2 C. Shortening
1 C. Brown Sugar
1 C. White Sugar
2 Eggs
1 tsp. Vanilla
1 1/2 C. Flour
1tsp. Soda
1 tsp. Cinnamon
1/2 tsp. Salt
3C. Oats
1 bag choco chips
Bake@ 350 degrees. for 8-9 min
Do not over bake!
Makes about 36 cookies
These are Paul's favorite cookies! A co-worker brought these in for them and he begged her for the recipee!! And now I'm begged to make them all the time by the entire family.
