( what ever floats your boat.)

Place in oven at 350 degrees. for about 20-25 min ( when the cheese is nice and bubbly.)
cut it up and serve.

Credit: my mom.

Boston Creme Pie

Okay .. this baby is delicious and this is coming from a girl who doesn't care for this cake or pie desserts! You are going to have 3 steps. It looks more time consuming then it is. I promise.

Step One- Cake:
1 C. sugar
1/3 C. Shortening
1. egg
1 teaspoon of Vanilla
1-1/4 C. Flour
1-1/2 tsp. baking powder
1/2 tsp. salt
3/4 C. Milk

Beat sugar and shortening till fluffy, Blend in eggs & vanilla. Add the rest of dry ingrediants beat..then add milk.Beat again until well mixed.
Pour into a well floured & Greased 9 inch round cake pan.
Bake at 350 degrees for about 30-35 min.( toothpick test it.)
Cool in pan for 10 min, then cool on rack till completely cool.

( while cake is baking)
Step Two-Creme Filling:

2 egg yolks in a bowl set aside.slightly beaten

In a sauce pan combine
1/3 C. Sugar
2TBS. cornstarch
1/4tsp. salt
Gradually stir in 1-1/2 C. Milk.( whisk the WHOLE time you are adding milk.)
Cook over medium heat. stirring constantly, until mixture thickens & comes to a boil.
Boil for about a 1 Min.
Add a few large spoonfuls to the 2 slightly beaten egg yolks.( I stirred the mixture after every spoonful.)

Return egg yolk mix to saucepan & bring to a boil for about 1 min. Stir Constantly.
Remove from heat and stir in 2 teaspoons of Vanilla.
( reminds me of vanilla pudding both taste and texture.)
Chill.

Step 3-Chocolate Glaze:
In a medium sauce pan combine:
Combine 2 Ounces of unsweetend chocolate ( I didn't have this, I use Milk Chocolate chips and it worked and tasted great. And it wasn't overly sweet. so just use what you have.)
3 Tbs. of butter
Stir over low heat until melted remove from heat and add:
1 Cup of powdered sugar. and 1 teaspoon of Vanilla.
stir in 3-5 tsp. of milk til it looks Slightly runny. ( think glaze. NOT frosting.)
Cool slightly
PUT IT ALL TOGETHER:
Once Cake cools completely Cut in half horizontaly to make 2 thin layers.
Spoon creme filling over bottom half of cake.
Set the top half of cake back on.
Spread Top with Chocolate Glaze.
Refrigerate til glaze is completely set.

Credit: My 101 chocolate recipe book.

Fresh Wheat Bread

( This isn't my bread.. The queen of yummy breads!

* I don't know if you can get wheat berry in a store or not. And I'm not sure I like it... Since I now have to make bread ALL the time.. But who wants to go back to store bought when you can have home made bread right?
This is one I found that I thought was both simple and tasted pretty good. This is a good white bread. On our all too Rare date nights we hit up T.G.I.F's for dessert which is the cheesecake factory Vanilla Bean Cheesecake.. I am not a big cheesecake fan.. But this one is light and airy and not just straight up cheesecake.( cheese cake texture overload makes me gag.. even if it has good flavor.)

Paul LLLOOOVVVEEESSS cake. ( inside story.. saving for another day.) So after being badgered to death I cracked and found a clone recipe off the Web. I am making it for Thanksgiving.. But wanted to make sure it worked out.. This was my very first ever attempt at Cheese cake.. and It got a 2 thumbs up.. and was soo very close to the Orig. I made one boo-boo.. but it was still Devinne. And it wasn't as hard as it looked.. Time consuming.. yes.. but not hard. So I must share.( p.s these are my pics. of my delec. creation.)

( Once a year or you'll weigh a million pounds.)

Vanilla Bean Cheesecake

Crust:

1 1/2C. OR you will get little clumps .. trust me on this one.)

1 C. sour cream

2 TBS. corn starch

1 C. Sugar.

2 TBS. butter, softened

1/2 tsp. vanilla

Vanilla Beans from One Pod*

Combine Cream cheese, sour cream, cornstarch, and sugar, mix until sugar is dissolved. Add butter, vanilla and Beans . Beat until smooth, Don't over mix.

bake @350 for 30-35 min Cool about 1-2 hours.

WHITE CHOCOLATE MOUSSE:

1 cup whipping cream.( I might go up another 1/2 cup on this.)

2 TBS. of powdered sugar

4 oz. cream cheese. SOFTENED.

4 oz, of white chocolate baking squares melted.

In a COLD mixing bowl beat cream until SOFT peaks form Gradually add powdered sugar until STIFF peaks from. Put this in a bowls in the fridge. DON'T wash your mixing bowl, beat the cream cheese in it, beat until Fluffy. Add the white chocolate and beat until smooth.

FOLD in the whipping cream.( put back in the fridge till ready for the cooled cheesecake.)

Vanilla Bean Whipped Cream:

1 Cup whipping cream( I did 2 cups.. I like whipped cream and nothing wrong with left overs.)

3 Tbs powdered sugar. ( it called for one.. it just wasn't sweet enough. so go off taste.)

Beans from one Vanilla Bean Pod*.

In cold mixing bowl, beat whipping cream until soft peaks form. Gradually add powdered sugar and then vanilla beans beating until stiff peaks form..( Refridgerate till your ready for it.)

After your cheese cake has cooled completely. ( important) Spread the entire mix of W.Chocolate Mousse over the top. Then add the V.B whipped cream evenly over the top. ( feel free to be decorative here..)

Shave 1-2 white chocolate bars and sprinkle on top. I refrigerated mine for another 2-3 hours before serving.

* Vanilla Beans Pods. can be found at a kitchen specialty store. (I.E. kitchen kneads. Loves to cook. etc. etc.) They are expensive, I paid $4 per pod. What you will do is take a knife and slit it right down the middle Length wise. Stretch open the pod. and Scrap all the "seeds from the insides.( I swear I was treating it like I was measuring Cocaine.. I was not wasting a thing..) They look like super tiny.. coffee grinds. And a bit sticky.

After your are done scraping seed. DO NOT throw away the pods. They have a tone of flavor in them.. Use them to make a syrup.. add to your sugar canister for a vanilla sugar flavor.. Boil them with your tea/cocoa/etc... ( get your money worth from these baby's!)

I know this recipe looks complicated.. It's not as bad as it looks.. It's worth the time spent. If you have a Kitchen aid or Bosch it will be easier for you.. IF not.. it will just take a bit longer to whip things is all.

Time Spent from Start to in the "fridge to chill.."( 5 1/2 hours) But a lot of that was waiting for the cake to cool. ( make it a day in advance and your good to go.)

Homemade Oreo Cookies.

I have seen these around about a million times. But I didn't like that the cookie part was soft.

Well I had an OREO sweet tooth and no Oreo's So I found an excellent recipe. That I really like.

They are a bit sweeter then reg Oreo's In fact they remind me of CAPRI's from pepperidge( except the filling isn't as "Lardy" tasting.)

It was pretty easy and the kids had fun squeezing in the filling!! They were a hit before they became "oreo's"

For Chocolate wafers:

1 1/4 C flour

1/2 C. Cocoa powder

1 tsp. baking soda

1/4 tsp. baking powder

1/4 tsp. salt

1 1/2 C. sugar

1/2 C +2 TBS. unsalted butter ( room temp.)

1 Lrg. Egg

Mix all your dry ingredients then add the butter .. mixing it in.. then add the egg. continue to mix until dough comes together in a mass ball.( it will look pretty dry.)

Take about a teaspoon of batter and place on a slightly greased sheet. place 2 in apart. Roll and flatten.

Bake for about 9 min on 350 degrees.

For the Cream filling

1/4 C. unsalted butter ( room temp)

1/4 C. Vegetable Shortening.

2 Cups. Powder sugar

2 tsp. Vanilla

( it wasn't smooth as I thought it should be so I add a CAP FULL of milk to make it creamy.

Place filling in a pastry bag( or zip lock and cut corner)

Blob about a teaspoon in the MIDDLE of upside down cookie( make sure cookies have cooled completely.) Place another cookie on top and lightly press down.

Makes about 30 cookies. the cookies is a bit crisper( which I prefer) If you want a "chewier" cookie use about 2 tsp of dough and shave a few min from oven time.

Carmel Apple CIder

Okay if anyone of you have had Starbucks Carmel Apple cider you know its freak'n fantastic. I have been trying to figure out how to make it just like them.. So I sneaked a peek online to see what I could find.. I found the recipe.. However I couldn't find the right ingredient that I needed so I went to plan B. I have not worked out measurements yet.. so roll with my " a little" of this and a "little of that ... ( It's not like it's hard..)It is still very very yummy.

The original recipe calls for :
Tree top apple juice
Cinnamon syrup
whip cream
Carmel Topping

Well, I couldn't find any Cinnamon syrup ( coffee aisle.) But I did find Carmel syrup So here is what I tried

3 Cups(ish) APPLE CIDER ( don't get cheap when buying apple cider.) If your a bigger fan of juice go for it

about a cap full of Carmel syrup ( I don't add it until my apple cider was near boiling point.)

About a 1/2 of a cinnamon stick. Brought to a boil with the cider.

I have also used ground Cinnamon... it was a bit too strong & it all settles at the bottom so the last cup gets cinnamon overload. ( I would use a teabag next time for sure) I just tried using about Teaspoon of Cinnamon extract.. it's okay... But I like the idea of a the cinnamon stick.. ( if I could just find the syrup I would use that!)

Bring it to a simmering/boil..

Add whip cream topping and a squirt of Carmel topping.

I really like the taste. It was SIMILAR to the Starbucks Carmel apple. I do think I will try a few variations ... more with the spices ( wassail style) with Carmel added.

Quick/ Easy/ Cheaper/ and most importantly YUMMY.

Is this qualified as a recipe.. no, probably not.. but it's my new favorite thing so I'm sharing.

Chicken Cordon Bleu

okay these are my own pictures! I actually thought to pull out the camera.

4-6 Chicken breast. If they are thick. fillet them. If they are smaller leave them as is.

Trim off all excess fat.

Place chicken breast in between or in a heavy duty ziplock.( you want a heavy duty plastic so the meat mallet won't turn your chicken to mush.

Use a MEAT MALLET to flatten and tenderize ( both sides of chicken)

Add a piece of HAM ( I use what ever kind I have on hand.) Just so long as it fits and you can roll it up.

And a 1/2 Square ( Triangle it.) Of Swiss cheese.

To the middle of your flattend chicken.

Begin to roll from one side to the other.

And tooth pick, the middle and sides.( sides to attempt to keep the cheese IN)

Repeat process until desired amount is done.

Next.

Melt about a 3-4 Tbs of Butter ( or Margarine)brush all over the chicken

Then dip n Roll in Bread crumbs.( I like the italin bread crumbs.)

Place on a baking sheet. about 2 in apart.

Bake at 350 Degree's for about 20-25 min( till chicken is completely cooked.)

Turn off oven... add another Triangle of swiss cheese on top( since you will still lose a bit out the sides. and we like cheese.) Flip your oven to broil. let the cheese melt and bubble. ( watch close. YUM!

This recipee I got from my Sister Heidi, she made this for us on one of our visits up to Boise! so yummy.

Mom's Apple Crisp

2C.
